Spinach & Corn Cheese Balls with Bacon (and a Hot Honey Mustard Dip)
Ingredients
1. Spinach (blanched) - 1 cup
2. Sweet corn (boiled) - 1 cup
3. Potatoes - 2 (medium)
4. Nomad food Project’s Onion and garlic jam - 2 tbsp
5. Nomad food Project’s Bacon crack - 2 tbsp
6. Nomad food Project’s Hot Honey - 1 tbsp
7. Mayonnaise - 1/2 cup
8. Mustard paste - 1/2 tbsp
9. Cheese cubes ( preferably mozzarella )
10. Green chillies - 1 tsp
11. Mint - 1 tsp
12. Pickled Jalapeños - 1/2 tbsp
13. Spring onion - 1/2 tbsp
14. Garlic powder - 1 tsp
15. Chaat masala - 1 tsp (optional)
16. Mixed herbs - 2 tsp
17. All purpose flour - 1/2 cup
18. Corn flour - 2 tbsp + 2 tbsp
19. Breadcrumbs
20. Pepper - 1 tsp
21. Salt - as required
22. Oil - for frying
Procedure
1. Combine finely chopped blanched spinach, coarsely crushed boiled corn and
mashed boil potatoes. Add finely chopped green chillies and mint to this.
2. Add the bacon crack, onion & garlic jam, garlic powder, chaat masala, 1 tsp of
the mixed herbs, and 1 tsp of pepper & salt - mix this well.
3. Add 2 tbsp of corn flour to bind the mixture, flatten a small portion in your palm
and place a cube of cheese in the middle and then shape it into a ball. Make sure
the cube is fully covered.
4. Prepare a slurry by combining corn flour, all purpose flour, 1 tsp mixed herbs, 1
tsp pepper and salt.
5. Dip each ball in this slurry and coat well with breadcrumbs.
6. Heat some oil and fry the balls until golden.
7. Serve with a honey mustard mayo dip by combining mayonnaise, mustard paste ,
hot honey, chopped pickled jalapeños and finely chopped spring onion.
